Healthier Apple Muffins
This is the easiest snack to whip up, its pretty healthy and DELISH! Ideal for after school snack, or to stick in your bag when you’re out and about!
Leons school doesn’t allow chocolate, so if you would like this for the lunchbox, just leave out the chocolate chips and substitute with raisins! Tried and tested by Leon and he LOVES them!
Ingredients (for 12)
1 cup self raising flour
1 cup old fashioned rolled oats
1 1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 cups plain yogurt
1/4 cup brown sugar
1/4 cup soft unsalted butter
1 tsp vanilla extract
1 cup peeled and chopped up apples (approx 3 kids apples)
1/4 cup raisins
1/4 cup chocolate chips
Mix all the ingredients together. Leave the apple, raisins and chocolate chips till the end.
Since there is very little butter in these, they may stick. I sprayed the paper muffin cups with fry light.
Half fill each muffin cup with the batter mixture
Sprinkle a few oats and a bit of brown sugar on top for a bit of crunch.
Fan oven cook for 22 mins on 190
Don’t attempt to take them out of the papers until they are cool as they will break and stick..
