These muffins are waaay healthier than regular muffins and are a really good little treat for breakfast or after school. They are super delicious and moist and your kids will LOVE them!
Also, (which is most important for me) they are super easy to make and take about 5 mins. All in one bowl.
1 cup yogurt
2 cups oats
1 1/2 tsp baking powder
1/2 baking soda
1/4 cup brown sugar
1/4 cup desiccated coconut
1/3 cups chopped up white chocolate
Mix all the ingredients wet first, then add in dry.
Since there is no butter or fat in these, they may stick. I sprayed the paper muffin cups with fry light.
sprinkle a few oats and a bit of dessicated coconut on top
fan oven cook for 22 mins on 190
dont attempt to take them out of the papers until they are cool as they will break and stick..
